Quality Pursuing for perfect brewing process

Even in times where cost efficiency and high efficiency are the main goals, we invest a good deal of time and effort to produce The Premium Malt's. Our hard work and perseverance has resulted in a beer with a truly pleasurable taste. In this process, hand wafted work is essential. We cannot make true quality beer simply by pressing a button and moving machines automatically. Each brewer's strong ambition and commitment to beer-making sustains the brewing process of The Premium Malt's.

Ingredients carefully selected to pursuit original formula

To ensure the floral aroma hop

Milled malt and hops are added to warm natural water and boiled to make wort. If too many hops are added, the wort will take on the flavor of grass. If the timing is wrong, a bitterness will linger in aftertaste, spoiling the refreshing taste.

Double decoction method

The Premium Malt's next aimed at a rich, solid finish. As well as increasing the amount of malt, Suntory devotes a great deal of attention to the wort production process. Usually, the mash is heated only once to a boil, whereas, in this process, the mash is heated twice to give the brew a solid, rich flavor. This double decoction brings out the rich malt flavor.

Aroma rich hopping

It took about 10 years from the start of research on The Premium Malt's to identify the most appropriate amount of malt to use and the timing. Finally we settled on “aroma rich hopping” where hops are added in two or three times. To bring out the aroma of the hops to the fullest extent, aroma hops are added to the wort as soon as it begins to boil. Fine aroma hops are added lastly to realize the elegant, flowery aroma.

Yeast is alive. That's why I go the whole way with it.

As yeast is added to wort, it breaks down the sugar in wort to alcohol and carbon dioxide, and produce a young beer. For this process, Suntory has adapted fermentation conditions suited to particular thick wort for The Premium Malt's. Brewers' respect for beer-making adds extra flavor to the beer.

After all, it all depends on our five senses

After matured beer goes through several filtration processes, it is filtered with a microfilter contains micromesh of about 3μ (3/1000 mm) for the last time to remove any yeast and lees. As all residues are removed, crystal-clear beer is produced. Inspection by sensory evaluations and stringent hygiene control throughout the entire process of production, makes it possible to produce clean and tasty draft beer that undergoes no heat treatment.

Thorough inspection management

Cans get easily scratched or dented and therefore quality inspections are conducted not only by can manufacturers but also independently by Suntory. Moreover, the speed of the inspection line is slower than regular lines to prevent the product from getting scratched. Each can of The Premium Malt's is inspected both by machine and by the human eye for content volume and external. We also conduct inspections at storehouses to ensure thoroughgoing control on supply and demand.
