April is the month of growth when sprouts begin to appear. At tea plantations, tea plants are covered to block harsh sunlight. Protected from sunlight and maintaining tenderness, sprouts on tea plants grow longer into "tencha" tea leaves. These tea leaves have a high content of amino acids that are the source of a rich flavor.

The "tencha" tea leaves are used for stone-ground tea leaves added to Iyemon.
Their quality is high enough to be used alone as matcha (ground green tea).

With the development of a new technology to eliminate the powdery texture left on the tongue, a method to select the finest particles of the stone-ground tea leaves was established.

Special Manufacturing Method Ideal for Premium Tea Leaves
New manufacturing method introduced for Iyemon eliminates excessive heating and seals in the flavor of freshly brewed green tea.
Brew premium tea leaves slowly at a lower temperature. This is the basic rule to brew tasty green tea with a good body and rich flavor. This is because amino acids, the source of a rich flavor, are more easily extracted at lower temperatures. The body and rich flavor of quality tea deteriorate at high temperatures and cannot be recovered. In general, green tea drinks are bottled at 85 degrees Celsius, which is necessary for sterilization. However, the high temperature completely ruins the flavor of tea slowly brewed at a lower temperature.

Find a way to maintain low temperatures and produce a bottled green tea that tastes as good as tea brewed in a teapot. This was an uncompromisable creed in the development of Iyemon. With the "unheated sterilized bottling" method newly introduced for Iyemon, sterilized PET bottles are filled in a clean room, completely free of contamination. By eliminating any extra heating of the tea, this method has made it possible to minimize the deterioration of flavor. Premium tea flavor, achieved by premium tea leaves and water, is sealed in by a well-thought-out manufacturing method. This is the secret behind the great taste of Iyemon.
