Tea has been loved for hundreds of years. Indeed, Asian countries such as Japan and China have more than a thousand years of tea history, so it seems impossible to speak of their history or culture without tea.
Looking at the opposite side of world there is another popular tea so called English tea which originated in the 18th century.
There are many teas produced around the globe and people enjoy the wide variety. Ironically, not very many people realize that all of those kinds of teas are derived from one plant, nor do they realize the difference between green tea and black tea.
Actually, black tea and green tea look different from one another but you can make both teas from same plant if you want.
The key is fermentation. After the harvest of tea leaves, if fermentation proceeds fully proceeded, it becomes "black tea".
If you prevent natural fermentation, that is "green tea", or if you stop fermentation halfway, it'll be called "oolong tea".

Chado (way of tea) was perfected in the 16th century by Sen no Rikyu.
Chado has become an integral part of Japanese culture and emphasizes principles such as harmony, respect and tranquility. Chaji (tea ceremony) features many ritual stages, each based on creating a perfect moment in time: from using a bamboo brush to prepare the tea to serving guests with graciousness and hospitality. In the end, Chado is an experience that enhances our way of life. We end the ceremony by saying
" Kekko-na-otemae-desu (Giving thanks for the tea)".

GREEN TEA COMES OF AGE
Green tea is one of the hottest drinks in the US right now. In 2004, the sales of green tea grew +24%. From 2001 to 2004, sales increased 68% escalating from 149,000- 251,000 kg, annually. This growth is significant and is expected to continue. Green tea has become a staple of American society. It is a favorite beverage of athletes, actors and super models.
Key drivers of growth are its fresh taste, its palate cleansing properties, and the recent highly publicized boom in Japanese/Asian-Fusion food.
