Recognition for Research on Coffee Aroma Science

Takatsugu Tsuchiya, a researcher at Suntory Global Innovation Center, has received an award from the Japan Association on Odor Environment.

The award recognizes researchers aged 40 or younger who have demonstrated originality and future potential in the field of odor and aroma science. Mr. Tsuchiya was recognized for his research achievements in the science of coffee aroma, as well as for his accomplishments across a broad range of research fields and his future potential.

The awarded research focused on the changes in aroma that occur when water is added to coffee oil. By analyzing the behavior of hydrophilic and hydrophobic compounds, the study clarified the mechanism underlying the transformation into roasted aroma. These findings are expected to contribute to the design of flavors and the development of higher-quality food and beverage products.
